Internal Temperature Targets
Rare: 52–54°C
Medium-rare: 57–60°C

For Wagyu burgers, 57–63°C gives the best balance of juiciness and fat rendering.
Rest 3–5 minutes after cooking.
Can be Cooked from Frozen on a BBQ
Preheat the BBQ
Set up for medium-high heat (about 200–230°C / 400–450°F).
Clean and oil the grates.
Season
Lightly season the outside with salt and pepper just before cooking.
Avoid pressing or flattening the burger.
Place frozen patties directly on the grill.
Cook 5–6 minutes per side with the lid closed.
After flipping, move to a slightly cooler part of the grill if flare-ups occur.
Check Internal Temperature
For frozen Wagyu burgers, medium (63°C) is usually the sweet spot—juicy, safe, and still rich.
Rest for 3–5 minutes before serving.
Tips for Wagyu
Don't press the patties.
Avoid excessive flipping (once is ideal).
Watch for flare-ups from the higher fat content.
Use a thermometer rather than relying solely on time, since thickness varies.
